Chicken Adobo
A classic Filipino dish featuring tender chicken simmered in a savory, tangy sauce of soy sauce, vinegar, garlic, bay leaves, and black peppercorns.
How to make it
Step-by-Step Instructions Marinate: In a bowl, combine the chicken, soy sauce, and half of the crushed garlic. Cover and marinate in the refrigerator for at least 30 minutes (preferably 1–2 hours). Sear the Chicken: Heat oil in a large skillet or pot over medium-high heat. Remove chicken from marinade (reserve the liquid) and sear for 2–3 minutes per side until lightly browned. Combine & Simmer: Pour in the reserved marinade, water, remaining garlic, black peppercorns, and bay leaves. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes until the chicken is tender. Add Vinegar: Pour in the vinegar and bring back to a gentle simmer uncovered for 10 minutes without stirring (this cooks off the harsh raw vinegar taste). Reduce the Sauce: Stir in sugar if using. Continue to simmer uncovered for another 5–10 minutes until the sauce reduces, thickens, and turns glossy. Serve: Discard bay leaves and serve hot over steaming white rice.
